A Sustainable Restaurant Association is to be set up in the UK this month to promote and audit CSR in the sector.
The association will be a nationwide, membership-based body open to all restaurants, from independent eateries to high street chains.
The membership criteria, to be audited by GoodCorporation, are now being tested by a number of restaurants. They include standards on local food sourcing, waste management, treatment of staff and tipping, and the use of sustainable fish stocks, in addition to more general criteria on a restaurant’s carbon footprint and behaviour in the community.
New members joining the scheme will receive guidance on how to meet the criteria, after which they will be subject to an on-site GoodCorporation audit.
The association is in talks on membership with chains such as Pret A Manger, Carluccio and Pizza Express, as well as smaller, local restaurants. The London restaurant chain Leon is already piloting the organization’s criteria.
